What might you wonder is what makes these stuffed jalapenos so special? Using pickled jalapenos from a can makes these stuffed jalapenos amazing. Pickled jalapenos aren't too hot. Sometimes when you enjoy fresh jalapenos they can be too hot, but the pickling of this pepper seems to help regulate the heat.

You can make these peppers with a few simple ingredients. You are going to need cream cheese, mayonnaise, pickled jalapeno peppers, sliced green onions, and pimento peppers.
Luby's Stuffed Jalapenos
Luby's Stuffed Jalapeno Peppers
These are delicious and easy to make, and can be made ahead of time.
- 1 can (26 ounce) whole jalapenos, sliced in half by length and seeds removed
- 1 8 ounce package softened cream cheese
- 2 tablespoons sliced green onions
- 1 tablespoon minced pimiento peppers
- 1/4 cup mayonnaise
Leave cream cheese out of refrigerator to soften. Once softened whip cream cheese and add the following; mayonnaise, chives, pimientos. Blend together until smooth and fluffy. Fill jalapenos with cream cheese mixture and enjoy. You may have to double this one--you can't eat just one! These would be a nice party buffet fill-in or a side dish for an office luncheon. Cover and store remaining jalapenos in refrigerator.Print Recipe
