  • 6-inch round flour tortillas
  • Whole Eggs
  • American cheese slices – this cheese melts perfectly for this recipe, I recommend going to the deli counter and getting the better quality American cheese
  • Salsa

How to Assemble a Breakfast Burrito

  1. Crumble pork sausage and fry over medium heat in a large skillet. Make sure you continue to crumble the sausage so you end up with tiny bits of sausage.
  2. Drain sausage, then add chopped onion, green chiles, and chopped tomatoes. Cook long enough on medium heat so the veggies heat through.
  3. Crack the eggs into a medium-sized bowl and whisk them together. Then pour the beaten eggs over the sausage vegetable mix, and reduce the temperature to medium-low.
  4. Stir the eggs occasionally until they have cooked through. Taste and add salt and pepper if desired.
  5. Heat the tortillas in the microwave or in a skillet until they are warm.

Ingredients

  • 1 pound pork sausage mild
  • 1/2 cup yellow onion diced
  • 1/4 cup fresh tomatoes diced
  • 1 tablespoon green chilies (diced those in a can)
  • 10 tortillas 6 inch torillas
  • 9 eggs
  • 6 ounces American cheese 12 slices
  • 1/2 cup salsa

Instructions

  • Crumble and fry pork sausage, stir and separate meat so it will fry in small little pieces. Remove from heat drain excess grease. 
  • Place drained sausage in frying pan add onion, green chilies, and tomatoes, heat on medium temperature just until sausage and vegetables are heated through, stir frequently. 
  • Measure 2 cups of eggs and beat. Add the eggs to the pan with the sausage mixture. When cooked remove from heat. 

To assemble

  • Place two tablespoons of the sausage and egg mixture onto 1 tortilla, tear each slice of American cheese into two even portions, then place the cheese on top of the sausage mixture, and roll the tortilla. 
  • If you make these all ahead of time, you can wrap in plastic to store them in the refrigerator or freezer, and then heat them up in the microwave for a moment or two. 
  • Serve with your favorite taco or Picante sauce. You will find these are milder and really great for breakfast. I also like to serve sour cream and avocado with mine.

    I used a dozen eggs, 2 cans of green chilies and a whole slice of cheese on each burrito. I also found that the slightly larger than 6 inch tortillas folded easier. All in all, delicious! I made 24 out of this recipe and will eat them for my work week breakfasts! Fantastic!

    For those people who worked at McDonald’s many years ago, that is the exact recipie we used for making up batches of Breakfast Burrito mix. There are 2 small variations:
    McDonald’s seldom used the fresh onions, we used the reconstituted onions that arrived dehydrated in bags. If you use fresh onions, make sure to chop them up small.
    We didn’t add Salt and Pepper to taste, the mixture automatically included 2 teaspoons of pepper to 1 can of Diced green Chilis, one cup of fresh diced tomatoes, 1# of crumbled sausage, 1/4 cup of reconstituted onions, and 12 eggs. We didn’t add salt as there was enough salt in the sausage and the can of diced green chilis.

    We really like the breakfast burrito concept, but don’t frequent McDs much.
    So this is great to make a bunch at once and freeze them.
    I put a lot more than 2 Tab spoons of filling in each one—but you can adjust anything in this recipe to suit your needs. That’s the nice thing about it 🙂
