This super easy Oven Baked Chicken and Rice Casserole can be made with either chicken breasts or cut up chicken. If you are using bone-in chicken you will need to cook it a little longer, but this is a great recipe to use with inexpensive chicken thighs.
This recipe is made with chicken, cream of mushroom soup, dry onion soup mix, and pimentos if you desire. This recipe takes no time at all to put together, and you will put it in the oven, and let it cook away.

Chicken and Rice Casserole
Everyone loves chicken and rice casserole.
- 1 pound chicken pieces cut up
- 1 cup rice
- 2 tablespoon pimento
- 4 ounces canned mushroom
- 1 package dry Onion Soup Mix
- 4 ounces butter
- 1/2 cup green bell pepper
- 1 can mushroom soup
- 1 1/2 cups water
In a 3 quarts casserole dish melt butter, add rice, pimento and chopped bell pepper and mushrooms. Lay chicken pieces on rice. Spoon mushroom soup over chicken. Sprinkle onion soup mix over all. Add 1 1/2 cups water. Cover with foil. Bake at 1 1/2 hours at 325 degrees. Remove foil for the last 15 minutes to let chicken brown.
