Ingredients

  • 12 slices bread
  • 8 ounces Spam or ham thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 6 eggs
  • 3 cups milk
  • 1/2 teaspoon dry mustard
  • 1 teaspoon salt
  • 3/4 cup crushed corn flakes or crushed potato chips
  • 4 or 5 cherry tomatoes sliced, for garnish

Instructions

  • Butter a 9×13-inch baking pan.
  • Place 6 slices of bread in a single layer in the bottom of the baking pan. Layer the Spam or ham over the bread, and cover with the cheddar cheese. Then place the remaining 6 slices of bread in a single layer over the cheese.
  • In a mixing bowl, whisk together the eggs, milk, and dry mustard. Pour the egg mixture over the strata and refrigerate overnight.
  • Remove the strata from the refrigerator, sprinkle with corn flakes or potato chips, and bake for 1 hour at 350°F.
  • Garnish with sliced cherry tomatoes to serve.
