Chinese Imperial Palace Almond Cookies
These Chinese Almond Cookies are like the wonderful almond flavor shortbread cookies served at my Chinese food restaurants.
- 2 cups cake flour all-purpose is ok to use
- 1 teaspoon baking powder
- 8 ounces butter room temperature
- 1 cup sugar
- 2 egg yolks
- 1/2 teaspoon lemon extract
- 1 teaspoon almond extract
- 75 blanched almonds
- 1 egg yolk for an egg wash
- 1 tablespoon water
Preheat oven to 300 degrees. Cream butter and sugar together until light and fluffy. Sift together flour and baking powder. Add 2 egg yolks and the extracts.
Blend in dry ingredients. Roll dough into 1 inch balls and place on an ungreased cookie sheet. Press an almond into each ball and flatten slightly.
Make an egg wash using egg yolk, and water, brush this over each cookie. Bake cooking for 15-18 minutes or until golden brown.
