What Is Au Gratin?

Au gratin describes a French cooking style where breadcrumbs and butter are placed on top of casseroles of various types and browned under the broiler to create a nice crunch. Cheese is not a requirement, even if it is delicious.

Au gratin dishes without cheese are simply made with breadcrumbs and dots of butter. However, many popular au gratin style casseroles do include grated cheese. The cheese melts into the casserole and combines with the breadcrumbs to make a wonderful topping.
