Have you ever wished you had a food gift, or perhaps you have often gone into your pantry and wanted to put together a quick sweet treat? Now you can with his homemade brownie mix. This brownie mix is from a collection of recipes I have been carrying around for just about 20 years. Recently I started going through old paper copies of recipes, and this is one I saved and never made until just recently. I believe this recipe may have originated with an old Southern Living magazine.

What makes this recipe special? In a matter of a few minutes, you can put together six batches of homemade brownie mix that will stay fresh for about six weeks. You could easily put a batch of the brownies into a quart jar, and give this as a gift.

You can make this easy to prepare brownie mix with simple ingredients you have in your kitchen.

Enjoy brownies with nuts, you can add nuts to the mix. While in the video shown here, I did not add nuts, this brownie mix tastes great when you add a cup of walnuts, or you could even add some semi-sweet chocolate chips, it’s your choice, they are your brownies.

This doesn’t add up to 18 cups, what’s the deal?
You are 100% right, if you add up the cups of the raw ingredients it isn’t 18 cups at all. I will say the weight of the mix does not change. No laws of physics broken here. What does change is the volume the mix takes up. When you use a mixer and you are whipping air into all of the ingredients, they increase in size. The final brownie mix isn’t dense like flour, sugar, and shortening. The final mix is aerated and takes up more volume. In fact, the volume increases about 10%, giving you just about 18 cups. Another way to think of this is you sift 1 cup of flour after it is sifted the flour will take up more volume. So if you put the sifted flour back into the measuring up it may overflow.

Can I use Coconut oil
I don’t know about that yet. When I test my recipes, I test them for the ingredients as written. I will test this for coconut oil, but I have not done so yet. I personally haven’t done a lot of baking with coconut oil, so I personally don’t understand how it changes the other ingredients.

Ingredients

Chocolate Brownie Mix

  • 4 cups all-purpose flour
  • 1 tablespoon baking powder plus
  • 1 teaspoon baking powder
  • 1 tablespoon salt
  • 8 cups sugar
  • 2 1/2 cups cocoa powder
  • 2 cups shortening

One Batch of Brownies

  • 3 cups brownie mix
  • 1 1/2 teaspoons vanilla extract
  • 3 eggs
  • 1 cup nuts if desired

Instructions

For the Brownie Mix

  • Place the flour, baking powder, salt, sugar, and cocoa powder in a bowl. Whisk to thoroughly combine.
  • Add the shortening and cut it in with a fork or pastry blender until it has the consistency of cornmeal.

To Make Brownies with the Mix

  • Preheat oven to 350°F. Grease a square 8-inch pan or line it with parchment paper.
  • In a large bowl, combine 3 cups of brownie mix, 1 1/2 teaspoons vanilla, 3 eggs, and nuts.
  • Pour the batter into the pan and bake for 35 to 40 minutes.

    I think the fat content of the mix would not be so good in the freezer, However, in the fridge it should last quite a long time… just be sure to bring it, and the eggs, to room temperature before making your brownies.

    Please answer the question from the rude person that told you to do the math….18 cups , but the there are on,y 16 in the recipe. Does it still make six batches?

      Sure, I am happy to answer the question. The weight of the ingredients does not change, that is 100% true. The volume changes. When I whipped the shortening into the mixture the dense texture of the pre-mixed ingredients changes.

      If you ever have scooped up brown sugar, you know it is not as dense as flour. This would be another example of the fact sometimes the same volume of one item, does not weigh the same as another volume of something else.

    I will mix up a batch and leave out the shortening until i am ready to use it. It should freeze indefinitely by doing this.

        I am confused, I made the brownie mix, I have made it multiple times. I have not made it with coconut oil substituted for shortening. I stated I have not made the recipe with coconut oil. I mixed it up, and have that version ready to be tested. I have made the recipe as posted several times. I shot a video for it a couple of weeks ago. That video goes live on Sunday.

    Love this idea. How many ‘pans’ of brownies will the master mix make? If the master mix has shelf life of 6 weeks, do you think it could be frozen longer? Thanks, dee

      The recipe will make 6 8×8 pans of brownies.

      I have not tried to freeze the master mix. I am sure that would extend the shelf life. I wouldn’t push it past 90 days in the freezer. The mix is high fat, and I think that would lessen the shelf life of the mix.

        Believe it or not, I can do math 😉

        The weight of the ingredients does not change. If we were to weigh out the portions they would not change. The volume changes a bit. The shortening, when mixed in breaks up into tiny pieces as it aerates. So the volume of the mix increases. I hope this is a good explanation for you, if not, I am happy to create a live video, and demonstrate how this works.
