Eight Layer Taco Dip Recipe

Long before TGI Friday’s was making their Nine Layer Dip, a recipe was circling around many potlucks and gatherings. This was my grandmothers recipe for eight layer taco dip. Source Virginia McDowell. Jefferson City, Mo. 1975. This is extremely tasty and is also known as Eight Layer Dip, and if you want to make it like T.G.I. Friday’s I would add a little Cilantro as the top layer.

Long before TGI Fridays made their famous eight layer dip, ladies everywhere were making their own version of the eight layer taco dip recipe. This recipe featured 2 cans of the Frito Lay Bean Dip. If you don’t want to pick up those cans of bean dip you can use canned refried beans. I like the flavor of the Frito Lay Bean Dip a little more.

You can actually be a little flexible in your preparation of this recipe. If you don’t want to use olives, you could use mayonnaise. Also, if you wanted to make your own Guacamole you could do that instead of using the recommended Avocado dip. I like to add cilantro as well.

It is best to make this recipe just before serving. I do not think this is the ideal make-ahead dish. Some of the lighter ingredients do not hold as well as the base of the dip. You could always add your fresh toppings just before serving this dish. I love to serve this with corn chips or even fried tortilla chips. It is up to you how you want to serve this dish.   • 1 package Taco Seasoning Mix
  • 20 ounces Frito Lay Bean Dip
  • 1 cup Mayo
  • 8 ounces Avocado dip
  • 18 ounces sour cream
  • 1 cup sliced black olives
  • 1 cup chopped green onion
  • 1 cup seeded chopped tomatoes
  • 1 cup shredded Cheddar cheese


  • Spread bean dip in a 13x9" pan. Top with Avocado dip. Combine sour cream, mayo and taco seasoning and spread in pan. Sprinkle with chopped onion, tomatoes and olives. Cover with shredded cheese.
