  • 5 cups blanched whole almonds
  • 4 egg whites
  • 3 cups sugar
  • 4 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 cup blanched chopped almonds or slivered almonds


  • Preheat oven to 325°F.
  • Puree whole almonds in blender.
  • Beat 3 egg whites until foamy in a large bowl.
  • Add pureed almonds, sugar, flour, and vanilla. Mix until the dough becomes pliable. It is stiff, beat in another egg white.
  • With your fingers, take small pieces of the dough, roll in chopped almonds, and form into your preferred shape - round, rectangle, or crescent shape.
  • Arrange the dough pieces on a lightly greased baking sheet.
  • Bake about 20 minutes, until light golden.
  • Cool the cookies on the baking sheet. Do not remove them from baking sheet until they are completely cooled.
