Honey and Thyme Roasted Carrots

Fresh carrots are cooked with an easy marinade. The marinade is simply honey, lemon juice, and a bit of olive oil. You can add salt and pepper, and toss in some fresh or dried thyme, and you are going to have a simple side dish you will love.

You can make colorful carrots, they taste very similar to your standard orange carrot.

Ingredients
- 1 pound carrots washed and trimmed
- 1 tablespoon olive oil
- 1 tablespoon honey
- 2 tablespoons lemon juice
- salt and pepper
- a few fresh thyme leaves or pinch of dried
Instructions
- Preheat the oven to 400 degrees. Cut the carrots into thick batons - try and make them similar sizes and then they will cook evenly. Place in a roasting tin, add the oil, honey and lemon juice and seasoning and toss well to mix. Roast the carrots for 20-25 minutes, stirring halfway through this time, until the carrots are golden and tender. Scatter over the herbs and serve warm.
