Old Fashioned Rice Pudding

Few desserts are as simple and comforting as Kozy Shack Rice Pudding. There is a pretty good chance that you grew up woofing down tubs of the stuff. But rice pudding is not just for kids or nostalgia. It is pretty darn delicious, too, and if you never had rice pudding before, you really missing out.

Although many Kozy Shack Rice Pudding recipes are floating around on the internet, few deliver this recipe’s creaminess. Why not whip up a batch for old-time’s sake or to try something new?

A Few Words About Rice

The type of rice you use in this recipe makes a huge difference to the texture of the cooked rice itself and the overall consistency of the custard. If you want to understand why, you need to know a little something about brown rice.

You probably already know that brown rice is healthier than white rice, but why? The reason is that brown rice is a whole grain. That means each grain of brown rice still has its bran, germ, and endosperm. While the bran and germ contain most of the nutrients in rice, they’re the parts responsible for the chewiness and distinct taste of brown rice.

Removing the bran and germ gives the rice a much milder flavor that is perfect for rice pudding. There are several ways to remove the bran and germ from the rice, but the most common method in the US is by using water. Other removal processes prevalent in different counties can leave behind residue that needs rinsing off before cooking.

In addition to using water-polished rice, look for shorter grains like Arborio or Japanese sushi rice for the best results. These types of rice cook to a tender but not mushy consistency.

Tempering Your Eggs

This is a pretty easy recipe to follow without a lot of things that can go wrong. However, there is one step that requires your careful attention. To avoid scrambling the egg yolks when pouring them to the pudding base, you must slowly warm the yolks. Do this by adding one spoonful of the hot liquid to the yolks at a time while stirring constantly. After the egg yolks are warm, you can combine the egg yolk mixture with the rest of the pudding base.

Tips For Making and Serving Kozy Shack Rice Pudding

  • Thoroughly cook out the flour raw taste. Adding flour to this recipe helps to thicken it, but you must allow the pudding base with the flour to come to a full boil for at least 2- 3 minutes.
  • Add a few raisins to the recipe. Many folks love to stir in a handful of rum-soaked raisins with the cooked rice to add a pop of flavor.
  • Top your rice pudding anyway you want. A dollop of whipped cream and a sprinkling of cinnamon on top is a traditional way of serving rice pudding, but you don’t have to stop there. Fruit jams made from sour cherries, apricots, or peaches are great toppings as well.
  • Store the rice pudding covered in the fridge. While the rice pudding will last in the refrigerator for up to a week, it is best to finish within 48 hours to avoid the rice becoming overly mushy.

How to Make Kozy Shack Rice Pudding

  1. Cook rice according to package instructions.
  2. Place sugar, flour, salt, and milk in a saucepan.
  3. Cook on medium-low heat until the mixture begins to boil, stirring constantly.
  4. Let boil for 2 to 3 minutes, stirring constantly.

  5. Remove from heat and slowly drizzle some of the hot mixture into the egg yolk while stirring or whisking constantly.

  6. Pour egg yolk and rice into hot pudding mixture and place back on the stove.
  7. Cook for 2 to 3 minutes, stirring constantly.
  8. Remove from heat, add vanilla, and stir to combine.
  9. Refrigerate before serving.
  10. Serve with fruit, whipped topping, cinnamon, or freshly grated nutmeg.

Ingredients

  • 1 cup cooked rice water polished rice is best
  • 3/4 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 egg yolks beaten
  • 1/2 teaspoon vanilla extract

Instructions

  • Place sugar, flour, salt, and milk in a saucepan.
  • Stir on medium-low heat until the mixture begins to boil. Let boil while stirring constantly for 2 – 3 minutes.
  • Remove from heat and slowly drizzle 1/2 cup of the hot mixture into the egg yolks while whisking or stirring constantly.
  • Pour egg yolk and rice into hot pudding mixture and place back on the stove. Continue to cook for 2 – 3 minutes. Stir constantly so the pudding does not form lumps and stick to the bottom of the pan.
  • Remove from heat, add vanilla, and blend well.
  • Chill before serving.
  • Serve with fruit, whipped topping, cinnamon, or freshly grated nutmeg.

    I have been eat this every day all day for 3 weeks now. I’m so addicted. The price is great and I have a Wal-Mart at booth ends of my street. Was surprised to find out Heritage Dairy store has been putting it in their clear plastic containers and up the price and selling it as the brain. Wow when 1 of the workers told me i stopped buying it from them. I looked for coupons and couldn’t find any. With coupon I can buy more. I’m soon addicted.

      The thickener may be from the flour. I don’t believe flour is listed in the Kozy Shack ingredient list.

        It is the flour. I made this 4 times reducing the flour each time Finally I used only a 1/4 cup of flour minus a tablespoon and it was perfect. Real creamy. It’s the best rice pudding I ever had. I have a recipe I’ve been making for years and this is so much better and easier. I love it!!!! Can’t stop eating it. So try the reduction of flour and that should solve the thickness problem. You will be very happy

    Im confused- some people are suggesting to use egg whites, but the recipe calls for egg yolks? So does that mean to omit the egg yolks completely? and when should the egg whites be added to the mixture?

    This is amazing!.. I can’t compare it to Cozy Shack since I don’t have one sitting here side by side but I have made it several times now and my family loves it! I add a small dash of nutmeg and several dashes of cinammon; you can add raisins if you want. I dust the top with more cinnamon when it’s done. It says chill but I like it warm too… 🙂

      I have not changed the amount of sugar, or egg yolks in the recipe but I’m guessing 2 large eggs yolks would work and 1/2 cup sugar would be enough for most since it’s fairly sweet, but we like it that way! 🙂 I’ve also added more rice in the past to use use it up but my family likes it better with the called for amount because it’s creamier…

    I’ve been buying Kozy shack cinnamon raisin rice pudding for years and loving it. Now my last 3 purchases have no raisins in it..What Happened???

      You really think this is the best place to ask that question………… but im pretty sure kozy shack cinnamon RAISIN rice pudding will still have raisins in it….or you’re buying something different 😛

      Why would you put FLOUR in the recipe. I have to be Gluten free because I have Celiac Disease. Kozy Shack claims to be gf. I have never heard of putting flour in any kind of pudding.

    OMG AMAZING!!!! Followed suggestions and increased rice to 1.5 cups and decreased sugar to 1/2 cup, used three eggs and whipped the egg whites to mid soft to stiff peaks and whisked NOT FOLDED in after removing from heat the last time. Also added almost tsp vanilla, just because it’s so yummy, and a sprinkle of nutmeg and cinnamon. AGAIN AMAZING!!!! And SO easy to make compared to oven methods. TY!!!!!!! 94 year old G-ma loved warm and cool!!!!!

    Very sweet! I used 1 1/2 cups of rice also,I like rice pudding with rice not all pudding.
    Next time will use 1/2 cup sugar. I also whipped up the egg whites after the mixture cooled
    and folded it into rice pudding! Yum! light and airy make sure you add some cinnamon!

    I listened to the other reviews and used less sugar and only 2 eggs. Turned out great except I used 1/2 cup of sugar and its still very sweet (too sweet in my opinion.) Would make again but with 1/4 cup of sugar.

    I will agree with Mercedesbrietzke it was a bit on the sweet side. I think that the egg yolk was fine but I also think it could be reduced to two egg yolks if you were short an egg. I am looking forward to making some alterations like using brown sugar for butterscotch. The consistency was excellent.
