The summer often means potato salad. So often we make a mayonnaise based potato salad and they can seem heavy. You can do potato salad in different styles. This potato salad is made with fresh mint and scallions for a light and refreshing taste.
This recipe has its inspiration from a Lebanese potato salad. Lebanese potato salad is made with fresh mint, lemon juice, and olive oil. Potatoes are simply dressed in a fresh vinaigrette and this is a bright and wonderfully flavored salad. I am also adding some fresh scallions and peas to this salad. I love the texture of the peas and the scallions add a subtle onion flavor.

Variations on Lebanese Potato Salad
We all love to make a recipe of our own. Here are some ideas on what you could do differently. If you don’t have any scallions, you could swap for shallots or even a little white onion. I think you could also add about a teaspoon of minced garlic to this recipe for an additional great taste. If you don’t have mint, you may even want to use some fresh parsley.

Lebanese Potato Salad
Ingredients
- 24 ounces small potatoes
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- 1/2 teaspoon fresh ground black pepper
- 1 teaspoon salt
- 1/2 cup sliced scallions
- 2 tablespoons chopped mint
- 1/2 cup frozen peas
Instructions
- Boil tasteful selections potatoes in boiling water for about 10 minutes, remove from water and drain. Slice potatoes in half. In a small bowl combine lemon juice, olive oil, black pepper, and salt. Whisk until vinaigrette is well blended. Pour the vinaigrette over potatoes and stir until potatoes are well coated. Sprinkle fresh mint, scallions, and peas on top of potatoes. Stir gently to combine. The salad tastes best when allowed to rest a few hours before serving.
