The summer often means potato salad. So often we make a mayonnaise based potato salad and they can seem heavy. You can do potato salad in different styles. This potato salad is made with fresh mint and scallions for a light and refreshing taste.
Lebanese Potato Salad

This recipe has its inspiration from a Lebanese potato salad. Lebanese potato salad is made with fresh mint, lemon juice, and olive oil. Potatoes are simply dressed in a fresh vinaigrette and this is a bright and wonderfully flavored salad. I am also adding some fresh scallions and peas to this salad. I love the texture of the peas and the scallions add a subtle onion flavor.

I love making this potato salad with the Tasteful Selections Potatoes. These potatoes are baby potatoes that come in several varieties, and each variety has its own unique taste. I love that these potatoes come washed and they are all of the even size. This means my potatoes will cook evenly, and since they are already washed I just need to pour them into a pot of boiling water without any preparation. You can find these Tasteful Selections potatoes all year round, they are grown in Bakersfield, CA and are available at supermarkets nationwide. I encourage you to check out their many delicious potato recipes on their blog at http://www.tastefulselections.com/recipes.

Variations on Lebanese Potato Salad

We all love to make a recipe of our own. Here are some ideas on what you could do differently. If you don’t have any scallions, you could swap for shallots or even a little white onion. I think you could also add about a teaspoon of minced garlic to this recipe for an additional great taste. If you don’t have mint, you may even want to use some fresh parsley.
