My inspiration for these mini Hasselback potatoes recipe came from a good friend of mine. She mentioned when she was a child her mom used to make this style of potatoes with small potatoes. I thought these would be a fun dish to make. I have always loved how the mini Hasselback potatoes look like, but I haven’t made them too often. I made these with the Tasteful Selections potatoes. I love these potatoes because they come out in bags that are perfect for a family. The potatoes are all small, and they come completely washed and ready to go. All you need to do is to cut little slits into the potatoes and a drizzle of melted butter or even olive oil and then sprinkle a little salt and pepper on top.
Variations for Mini Hasselback Potatoes
I have made this dish with both melted butter and olive oil. Both work well. I like the flavor of the melted butter a little more. One time I even used a melted garlic butter left over from my Better Than Papa John’s Garlic Dipping Sauce. I have to say; those were amazing when made with a touch of garlic. The most important step it to make sure to drizzle or brush the potatoes after they are cut with a little oil or butter. This will keep the tender potatoes from drying out.

This recipe is very flexible if you don’t happen to have red potatoes. Mini Hasselback Potatoes
- 1 pound small potatoes Tasteful Selections recommended
- 2 tablespoons butter melted
- 1 teaspoon salt
- 1/2 teaspoon freshly cracked black pepper
- Preheat oven to 350 degrees. Make cuts into the potato, stopping just before you cut through so that the slices stay connected at the bottom of the potato. Space the cuts about 1/8-inch apart from each other. You will want to place about 8 to 10 cuts into each potato. When you have cut all of the potatoes place them in a baking dish. Brush or drizzle melted butter onto potatoes. Season with salt and pepper. Bake for approximately 20 minutes or until all potatoes are tender.
