This is Mississippi Mud Cake that my grandmother has made as long as I can remember. My grandmother can make a cake like no one else, this is one of her most requested recipes. Mississippi Mud Cake Ingredients

  • 1 cup butter softened
  • 2 cups sugar
  • 4 eggs
  • 1 1/2 cups all-purpose flour
  • 3 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 1/2 cups sweetened coconut flakes
  • 1 1/2 cups chopped walnuts

Marshmallow Layer

  • 7 ounces marshmallow cream

Mississippi Mud Cake Icing

  • 3 tablespoons cocoa powder
  • 1/2 cup butter
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 16 ounces powdered sugar sifted


Cake Directions

  • Preheat the oven to 350 degrees.
  • Grease and flour a 9 X 13-inch baking pan.
  • Mix together all cake ingredients in a large bowl.
  • Pour the batter into the prepared pan.
  • Bake at 350 degrees for 35 to 40 minutes.
  • Remove the cake from the oven and leave it in the pan.

Marshmallow Layer

  • Immediately after removing the cake from the oven and while the cake is hot, spread 7 ounces of marshmallow cream over the top of the cake.

Icing Directions

  • Make the icing immediately after spreading the marshmallow cream over the cake. You want to spread the icing over the cake while it is still warm.
  • Combine 3 tablespoons cocoa, 1 stick butter and 1/3 cup milk in a saucepan and bring it to a boil, stirring constantly.
  • Remove the chocolate mixture from the heat and add 1 teaspoon vanilla and 1 box of powdered sugar. Stir or mix until smooth.
  • Beat well and spread the frosting over the cake while warm.
  • Let the cake cool completely before serving.
