  • 16 ounces chicken breast
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons butter
  • 4 beets sliced
  • 1 blood orange sliced
  • 1 tablespoon fresh herbs (parsley, tarragon, chives, rosemary (choose one)
  • 1 tablespoon vegetable or olive oil
  • salt and pper


  • Preheat oven to 350 degrees. Season 2 chicken breasts with salt and pepper on both sides. Heat 2 teaspoons of butter in a skillet over medium heat. Cook chicken for 1 to 2 minutes on each side. The chicken will not be done, this cooking is to brown the chicken. Place chicken on the sheet pan. Peel beets and wash the orange. Slice the beets and orange into thin slices. Place beets and orange slices on the sheet pan. Sprinkle herbs over the chicken and vegetables. Drizzle vegetable oil over the vegetables and chicken. Season with salt and pepper. Cook for approximately 30 minutes.
