Ingredients

  • 4 medium potatoes
  • 2 teaspoons vegetable oil
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon ground paprika

Instructions

  • Preheat oven to 400 degrees.
  • Select potatoes that are uniform in size so the baking time will be similar. Scrub with a brush and grease lightly with vegetable oil. Bake at 400 degrees for 1 hour. 
  • When potatoes are done and have cooled just enough to handle. Cut potatoes in half and scoop out the meat of the potato. Be careful not to get too close to the edge of the potato. Mash the inside of the potato together with butter, salt, and ground black pepper. 
  • Sprinkle a dash of paprika on top and place back into the oven until the tops begin to brown.
