Hatch Pepper Butter Let butter soften to room temperature. Place butter in a small bowl and add 1 tablespoon of diced roasted Hatch chile peppers and 1 small clove of garlic that has been minced fine. Store seasoned butter in a small air-tight container until ready for use.
Corn Muffins Preheat oven to 425 degrees. Combine wet ingredients (egg, buttermilk, and melted butter) in a medium sized bowl. Add self rising corn meal to wet ingredients and combine until just moistened. Allow batter to rest for about 15 minutes before spooning into muffin tins that have been greased. Bake for approximately 15-20 minutes or until when a toothpick is inserted and it comes out clean.
