Roast, peel, seed and chop the bell peppers. Combine the roasted bell peppers, olives, olive oil, and pepper in a bowl. Stir and allow to rest for at least 15 minutes for the flavors to blend.
NOTES : Options. Add a few cloves of crushed garlic, or some fresh chopped rosemary to the spread. Soak olives in olive oil to remove some of the salty taste. The Olive oil can then be used in salad dressing.
