Seven Layer Casserole

Ingredients

  • 1 cup rice
  • 1 cup canned corn drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 16 ounces tomato sauce
  • 6 ounce water
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1 pound ground beef
  • 4 strips bacon

Instructions

  • Place these ingredients in layers in a 2-quart baking dish with a tight-fitting lid; uncooked rice than corn. Sprinkle with salt and pepper. Pour 1 can tomato sauce and 1/2 can water over first two layers.
  •  Add onion layer, then green pepper layer. Cover green pepper layer with uncooked ground beef seasoned with salt and pepper. Pour the second can of tomato sauce and 1/4 cup water overall. 
  • Cover meat with eight pieces of bacon. Cover dish and bake at 350 degrees for 1 hour. Uncover and bake about 30 minutes longer.
