Pineapple Cream Cheese Cake

Ingredients

  • 1 cup sugar
  • 1 tablespoon cornstarch
  • 9 ounces crushed pineapple 1 can
  • 8 ounces cream cheese softened
  • 1 teaspoon salt
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon vanilla
  • 1 unbaked pie shell
  • 1/2 cup nuts

Instructions

  • Blend 1/2 cup sugar and cornstarch; add pineapple. Cook, stirring constantly, until thick and clear; cool. Blend cream cheese, remaining sugar and salt; add eggs, 1 at a time, stirring well. 
  • Blend in milk and vanilla. Spread pineapple mixture in pie shell; pour in cream cheese mixture. Sprinkle with nuts. Bake at 400 degrees for 10 minutes. Reduce oven temperature to 325 degrees then bake for 50 minutes longer.
