Savory Purple Mashed Potatoes

  • 2 pounds purple potatoes
  • 1/2 teaspoon salt
  • 1/3 cup heavy cream
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper


  • Peel potatoes and cut into pieces no larger than 1 inch by 1 inch.  Place potatoes into a pot, add 1/2 teaspoon to the pot, add enough water to cover the potatoes.  Cook potatoes on medium for about 15 minutes or until the potatoes are tender when pierced with a fork.
  • Drain potatoes, and place them back into the pot where they were cooked, add cream and butter.  Beat with a blender until the potatoes are smooth.  Season with salt and pepper.
