Boil tasteful selections potatoes in boiling water for about 10 minutes, remove from water and drain. Slice potatoes in half. In a small bowl combine lemon juice, olive oil, black pepper, and salt. Whisk until vinaigrette is well blended. Pour the vinaigrette over potatoes and stir until potatoes are well coated. Sprinkle fresh mint, scallions, and peas on top of potatoes. Stir gently to combine. The salad tastes best when allowed to rest a few hours before serving.
