Place a towel into a colander and then pour yogurt into a towel. Lay the towel over the yogurt to completely cover the yogurt.
This keeps the yogurt from picking anything up from the local atmosphere. Allow yogurt to drain for 5 to 6 hours, you can let the yogurt drain for longer, the longer you let the yogurt drain the thicker the yo-cheese will become. After the yogurt has been drained place it into a bowl.
Season with a 1/2 teaspoon of salt. If desired add seasonings of your own desire. For chive flavored, I add about 2 teaspoons of fresh or dried chives.
