Instructions
Finely chop onion, carrots, and celery.
Melt butter in a medium-sized pot.
Add the vegetables to the pot and sauté until lightly browned.
Add bay leaves, salt, and pepper.
Add chicken stock and lentils.
Cook on medium-low heat until the lentils are done, about 20 to 25 minutes.
