Ingredients

  • 6 tablespoons minced garlic (about 12 to 18 cloves)
  • 4 teaspoons soy sauce
  • 8 ounces unsalted butter softened
  • 1/2 teaspoon lemon juice optional

Instructions

  • Combine the garlic and soy sauce in a food processor and puree.
  • Place the softened butter in a large bowl. Add the soy sauce mixture and lemon juice, if using. Mix thoroughly.
  • Store in an airtight container in the refrigerator for up to 1 week.

Recipe Tips

  • Peel and mince the garlic before blending so you can measure the right amount.
  • Scrape the blender thoroughly. The pureed garlic and soy sauce hold most of the flavor.
  • Keep stirring until the butter is one uniform color. Streaks mean the garlic is not fully mixed in.
  • Taste before adding more soy sauce. It is salty, and the mixture is easy to over-season.
