Instructions
Combine all the ingredients for the salad dressing in a small bowl and whisk until thickened. Store the dressing in an airtight container and refrigerate any leftovers.
To assemble the salads, divide the lettuce between two large salad bowls. Layer half of the chicken, mandarin oranges, blueberries, strawberries, pecan pieces, and pineapple in each bowl.
