¼cupfinely minced or blended canned jalapeño pepper slicesfrom a jar, drained

½teaspoononion powder
½teaspoondried garlicor garlic powder
1½teaspoonssalt
½teaspoongranulated sugar
1/4teaspoonyeast extractsold as Marmite, Vegemite, or nutritional yeast paste
Instructions
Place all ingredients into a blender, and blend until just smooth.
Heat over medium heat, stirring constantly, until the sauce just comes to a gentle simmer, about 4–5 minutes. Do not boil or reduce aggressively; this is a thin sauce.
Let cool to room temperature, then transfer to a glass jar or squeeze bottle.
Refrigerate at least 1 hour before serving. Flavors sharpen and meld with chilling.
Recipe Tips
Blend the sauce thoroughly so the dried onion flakes and garlic fully break down. Any gritty texture usually means it needs another 15 to 20 seconds in the blender.
Simmering the sauce briefly mellows the raw edge off the vinegar and chili powder without cooking off the fresh jalapeño flavor.
Taste the sauce again after it's chilled. It mellows and rounds out as it sits, so it can taste sharper straight off the stove than it will the next day.
