Grate or chop apples in food processor. Squeeze out excess juice. Put apples into mixing bowl. Mix with eggs. Combine flour, salt, cinnamon, and baking powder.
Add to apples. Stir all ingredients together. Beat lightly with a spoon. If the mixture is still developing pools of juice, add more flour. Melt 2 Tablespoons of vegetable shortening in the hot pan to that melted shortening is one inch deep.
Drop 1 heaping tablespoon of batter at a time and press into the ban. The thinner you get this, the better it will be. After they are cooked garnish with the toppings for your choice.
