If using raw chicken: Place chicken in a pot and cover with water or broth. Bring to a simmer over medium heat and cook for about 30 minutes until fully cooked. Cool slightly, then shred the chicken and transfer to a large bowl. Make sure the chicken is at room temperature or chilled before mixing the salad together.
Combine the shredded chicken, celery, nuts, dried fruit, and mayonnaise in a medium bowl. Mix well.
Season with bouillon powder, salt, and pepper. Taste and adjust seasonings as needed.
