Ingredients

  • 4 pounds beef chuck roast cut into 1-inch cubes
  • 1 cup diced onion
  • 2 teaspoons chopped garlic
  • 1 teaspoon dried Mexican oregano
  • 1 teaspoon ground cumin
  • 2 tablespoons chili powder (McCormick brand is preferred)
  • 1 can whole tomatoes with their liquid (14.5 ounces)
  • 2 to 6 generous dashes liquid hot sauce (Frank’s RedHot Sauce is preferred)
  • 2 cups hot water
  • salt to taste

Instructions

  • Sauté the beef, onion, and garlic in a large skillet over medium-high heat until lightly golden.
  • Add the oregano, cumin, chili powder, tomatoes, hot sauce, and hot water and bring to a boil. Lower the heat and simmer for about 1 hour. Skim off the fat while cooking and salt to taste.
