Ingredients

Honey Mustard Sauce

  • 1/2 cup prepared mustard
  • 1/4 cup honey
  • 1/4 cup light corn syrup
  • 1/4 cup mayonnaise

Chicken

  • 1 pound boneless skinless chicken breasts (4 portions)
  • 1/2 teaspoon Morton Season-All seasoned salt
  • Vegetable oil
  • 1 cup sliced mushrooms canned or jarred, drained
  • 6 pieces bacon fried until crisp and cut in half crosswise
  • 3 cups shredded Colby Jack cheese
  • 2 teaspoons chopped parsley

Instructions

  • Blend all the ingredients for the honey mustard sauce until smooth. The corn syrup may be adjusted to your taste. Set aside until needed.
  • Rub the chicken breasts with seasoned salt and set aside to marinate for 1 hour.
  • Cook the chicken in a pan over medium heat with just enough oil to prevent sticking. Cook on both sides until the chicken is slightly golden and reaches an internal temperature of 165°F. Remove the chicken from the pan.
  • Slather the chicken breasts with honey mustard sauce. Top with mushrooms and 3 pieces of bacon. Sprinkle with shredded Colby Jack cheese until the chicken is completely covered.
  • Microwave or bake in a 350°F oven just until the cheese melts.
  • Sprinkle with parsley and serve with honey mustard sauce.

Recipe Tips

Expert Tips for Perfect Alice Springs Chicken

  • Pound chicken to even thickness: This ensures even cooking and more tender meat
  • Don't skip the marinating time: Even just an hour makes a huge difference in flavor penetration
  • Cook bacon until extra crispy: It will maintain better texture under the melted cheese
  • Use freshly grated cheese: Pre-shredded cheese contains anti-caking agents that prevent proper melting
  • Let chicken rest before assembly: A 5-minute rest after cooking helps the chicken retain its juices
  • Save some sauce for serving: The extra honey mustard for dipping takes this dish to the next level
  • Check chicken temperature: Use a meat thermometer to ensure chicken reaches 165°F for food safety
