Hamburger and Corn Casserole

Hamburger and corn casserole is a hearty casserole made with beef, pork, cornbread, and much more.  This hearty casserole will fill many bellies.

Ingredients

  • 1 pound ground beef
  • 1/4 pound pork sausage
  • 1/4 cup chopped onion
  • 1 teaspoon minced garlic
  • 20-24 black olives
  • 16 ounces canned whole tomatoes
  • 16 ounces canned corn
  • 1 1/2 teaspoons salt
  • 1 cup Milk
  • 2 teaspoons chili powder
  • 1 cup Cornmeal
  • 2 beaten eggs
  • 1 cup shredded Cheddar cheese

Instructions

  • Cook ground beef, pork sausage, onion, and garlic until meat is browned; drain. Stir in tomatoes with juice, drained corn, olives, chili powder, and salt. Heat to boiling. Pour into an ungreased 9 by b9 inch baking dish. Mix cornmeal, milk, eggs; pour over meat mixture. Sprinkle with Cheddar cheese. Bake at 350 degrees for 40 to 50 minutes or until golden brown. Makes 8 servings.
