Chicken drumsticks are one of my favorite cuts of chicken to use, in fact I am always on the search for a good drumstick recipe. I like dark meat when it comes to chicken, I think dark meat is more flavorful and these cuts of chicken to be less expensive. I like being able to save on a few inexpensive meals during the week, so I can splurge on other meals. Chicken drumsticks is one way I do this.

If you have never had miso before most grocery stores sell miso, it is typically sold in the refrigerated section of the diary case. Or at least, that’s where I find it. Miso is a fermented soy bean paste, and it has a wonderful flavor. You may have tried this flavor before but often as a salad dressing in many Oriental recipes. This has a wonderful tangy flavor.

I like to serve these miso glazed chicken drumsticks on a bed of cooked rice. I think they make a great combination. If you don’t want to use drumbsticks this will work well with thighs, or even white meat, you can use whatever you have on hand. I like to marinate these overnight if I can. I sometimes like to prep two meals at once, during the week so the next night I spend far less time in the kitchen.

Ingredients

  • 1 pound chicken drumsticks
  • 1/4 cup white miso paste
  • 1 tablespoon soy sauce
  • 2 teaspoons Mirin
  • 2 teaspoons sugar
  • 1 teaspoon chopped garlic

Instructions

  • In a small bowl combine miso paste, soy sauce, Mirin, sugar, and chopped garlic. Whisk together until mixture is well blended. Pour marinade over chicken and allow chicken to soak up marinade for at least 30 minutes. Preheat oven to 350 degrees. Place marinaded chicken into a baking dish. Bake chicken for 25 minutes or until chicken is done, it is done when the chicken is pierced and the juice runs clear. Serve with cooked rice if desired.
