How to prepare salmon like Texas Roadhouse

Their salmon is grilled on a flatop grill, but you can prepare it in a skillet for similar results.

  1. Clarify the butter by melting it in a small saucepan over low heat. Do not stir. In about 10 to 20 minutes, white solids will start to rise to the surface. Scrape the white bits off and discard them. Transfer the clarified butter to a bowl and set aside.
  2. Pat the salmon fillets dry with a paper towel, then season both sides with kosher salt.
  3. Place a cast-iron skillet over medium-high heat.
  4. When the skillet is hot, add enough clarified butter to coat the bottom.
  5. After the butter is hot, place the salmon in the skillet. Allow the fillets to sit untouched for three to four minutes to develop a golden crust.
  6. Use a thin spatula to gently turn the fish over. If the fish sticks, just wait 30 more seconds and try again.
  7. Pour the remaining clarified butter and one tablespoon of fresh lemon juice into the skillet.
  8. Slightly tip the skillet to allow the butter to pool along the edge closest to you and use a spoon to drizzle it over the top of the salmon. Continue basting until the salmon is cooked through, about 2 to 5 minutes, depending on thickness.
  9. Plate the salmon.
  10. Spoon the remaining lemon-butter over the salmon and garnish with minced parsley to recreate the famous Texas Roadhouse Salmon sauce at home.

Storing and reheating instructions

Refrigerator Storage: Cool salmon and sauce separately. Store sauce in an airtight container and place salmon in a single layer in a flat-bottomed, tightly sealing container for up to 3 days. Note that the butter-lemon sauce will congeal when cold.

Reheating Method: Place salmon in a deep baking dish in a preheated 275°F oven. Spoon the congealed butter-lemon sauce over the fillets and add a few drops of water. Cover loosely with aluminum foil and bake for 10-15 minutes until warmed through. The gentle heat prevents overcooking.

Freezing: Not recommended, as salmon loses texture when frozen and thawed. Enjoy within 3 days for the best quality.

The good news is that you don’t even need to warm the salmon. It is delicious cold in a salad or grain bowl.

Ingredients

  • 4 ounces butter divided use
  • 2 8-ounce fillets salmon skin removed
  • 2 teaspoons salt
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice divided use
  • 1/2 teaspoon finely minced parsley for garnish
  • ground black pepper to taste
  • 4 lemon wedges to serve

Instructions

  • Melt the butter in a small saucepan over low heat. Once melted and separated, set aside the clear gold liquid (clarified butter) and discard the white milk solids.
  • Season the salmon with salt on both sides.
  • Place a cast-iron skillet over medium-high heat. Add enough clarified butter to coat the bottom of the skillet. Once the butter is hot, add the salmon fillets. Leave the salmon alone for 3 to 4 minutes to allow a golden-brown crust to form; moving it too early may cause it to stick.
  • Using a fish spatula, carefully flip the salmon fillets. Immediately add the remaining clarified butter and 1 tablespoon of lemon juice to the pan. As the butter bubbles, use a spoon to continuously baste the salmon with the lemon butter for an additional 2 to 5 minutes, depending on the thickness of the fish.
  • Transfer the salmon to a serving plate and drizzle any remaining lemon butter from the skillet over the top. Sprinkle with the remaining tablespoon of lemon juice and the minced parsley. Sprinkle with black pepper if desired. Serve with fresh lemon wedges.

Notes

  • Atlantic salmon works best for this recipe due to its higher fat content and buttery flavor.
  • Don’t skip clarifying the butter. Regular butter will burn at the high heat needed for proper searing.
  • A cast-iron skillet holds heat better than stainless steel, creating superior browning.
  • The salmon is done when it flakes easily with a fork and reaches 125-130°F for medium or 145°F for well-done.
