This is a yummy cake that tastes pretty close to Mounds the candy bar.
Mounds Cake
Ingredients
- 1 box chocolate or fudge cake mix
Filling
- 1 1/2 cups evaporated milk
- 1 cup sugar
- 2 1/2 cups marshmallows
- 14 ounces frozen coconut
Icing
- 4 squares chocolate (4 tablespoons)
- 3/4 cup brown sugar
- 1 dash salt
- 1/3 cup water
- 1/4 cup margarine
- 1 teaspoon vanilla extract
Instructions
- Bake the chocolate cake in two 9-inch round cake pans according to the package directions. When the cake is baked and cooled, split the layers.
- To make the filling, combine the evaporated milk, sugar, and marshmallows in a pot over medium heat. Cook and stir until the sugar has dissolved and the marshmallows have melted. Remove from the heat and stir in the coconut.
- Spread the coconut mixture between each split cake layer and on top.
- To make the icing, place the chocolate and sugar in a small pot over medium heat. Cook and stir until the chocolate has melted and the sugar has dissolved. Add the salt, water, and margarine and simmer for 3 minutes. Remove from the heat. Add the vanilla and mix well.
- Frost the top and the sides of the cake.

The ingredient list doesn’t list marshmallows as an ingredient but the directions tell you to add them in the second step. What amount you are to add?

I don’t see a reply about the marshmallows. I have the same question..Couldn’t you use marshmallow creme? And about the evaporated milk and sugar, why not just use sweetened condensed milk?
