Why This Recipe Works
The magic happens when lemon Jell-O powder combines with butter, mustard, and garlic salt to create a glaze that’s both sweet and savory. As the chicken bakes, the gelatin melts and caramelizes, creating a beautiful golden coating while the natural juices from the chicken combine with the seasonings to form a delicious pan sauce. The butter ensures the chicken stays moist and tender, while the lemon provides brightness that cuts through the richness.
The Unexpected Star Ingredient
Don’t let the idea of Jell-O in a savory dish scare you away. The lemon gelatin doesn’t make this chicken dessert sweet; instead, it provides a subtle citrus flavor and helps create a beautiful glaze. Combined with the mustard and garlic, it develops into a sophisticated sauce that will have everyone asking for your secret ingredient.
Ingredients
For the Chicken:
- Boneless chicken breasts – Provide lean protein that cooks evenly and absorbs flavors beautifully
- Lemon Jell-O powder – Creates the signature sweet-tangy glaze and keeps chicken moist
- Yellow mustard – Adds tanginess and helps balance the sweetness of the gelatin
- Garlic salt – Provides savory depth and aromatic flavor
- Butter – Ensures moisture and richness while helping create the glaze
Step-by-Step Instructions
Preparing for Baking
- Preheat oven. Set oven to 350°F and lightly grease a 9×13-inch baking dish.
- Prepare chicken. Pat chicken breasts dry with paper towels and arrange in the prepared baking dish.
Creating the Glaze
- Mix dry ingredients. In a small bowl, combine the lemon Jell-O powder, garlic salt, and a pinch of black pepper if desired.
- Season chicken. Sprinkle the dry mixture evenly over both sides of the chicken breasts.
- Add mustard. Spread a thin layer of yellow mustard evenly over each chicken breast.
- Dot with butter. Place small pieces of butter on top of each chicken breast to help create the glaze and keep the meat moist.
Baking the Chicken
- Bake uncovered. Place the chicken breasts in a preheated oven and bake for 20-25 minutes, depending on their thickness.
- Check doneness. Chicken is done when the internal temperature reaches 165°F and juices run clear.
- Rest before serving. Let the chicken rest for 5 minutes before slicing to allow juices to redistribute.
- Serve with pan sauce. Drizzle the delicious pan sauce over the chicken when serving.
Chef’s Notes
The key to perfect Sunshine Chicken is not overcooking it. The lemon Jell-O helps keep the chicken moist, but overcooking will still result in dry meat. Use a meat thermometer to ensure perfect doneness every time.
Storage & Reheating Instructions

My family loved this recipe. My kids couldn’t believe it had Jello in it! So I had to show them the box!
This was AMAZING my son was picking it off his plate before I finished loading him up.I used the sugar free lemon jello and for the prepared mustard a dijon. Cooking time was off but then again my oven is 20 years old so I would start uncovered and check it at 25 minutes. Chicken comes out moist and YUMMMMMMMMMMMMY
