  • 2 tablespoon Butter
  • 2/3 cup diced celery
  • 2/3 cup diced onion
  • 2 cup diced potatoes
  • 1 teaspoon minced garlic
  • 2 1/2 cups hot water
  • 1 ounce Clam Base
  • 2 cups hot water
  • 7 ounces chopped Clams with Juice
  • 1/2 cup carrot peeled and grated
  • 1 pint half and half


  • 1/2 cup butter
  • 1/2 cup all purpose flour


  • Saute celery, onion, and garlic in the 2 tablespoon butter. Add potatoes and water, and simmer for 30 minutes. Add clam base, a pinch of thyme, salt, pepper, and hot water. Simmer for 15 minutes and add clams and carrot. Simmer 15 minutes and add half and half and water. Heat through until simmer. Meanwhile make a roux out of the 1/2 cup butter and the 1/2 cup flour make sure that the flour cooks through before adding this to the simmering soup.

    I have used this recipe now for a number of years and it is the best however the ingredients call for to amounts of water 21/2 cups and 2-3 cups hot water while the method calls for 1/2 and 12 and water so three amounts of water can fix that
