Bill Knapp’s History

To understand why this chicken marinade recipe is so special, you have to understand the history of this American classic restaurant.  Bill Knapp’s opened in the late 1940’s as a family restaurant chain.  It was predominately in the mid-west in states like Ohio, Michigan, Illinois, and Indiana but did eventually open restaurants in Florida.  Bill Knapp’s was committed to celebrating family.  One of it’s most popular traditions was to give people a birthday discount equal to their age.  As you can imagine it was popular with 80, 90 and some 100-year-old customers.  The whole family was also treated with a free slice of cake to celebrate someone’s birthday.   This chicken marinade recipe was one of it’s most popular.

Bill Knapp’s Chicken Marinade Recipe

This chicken marinade recipe gives you a cozy, family feeling.   Just as if it was being served on your kitchen table.

Here’s what you need:

  • Honey
  • Apple Juice
  • Garlic Powder
  • Ground Ginger
  • Soy Sauce
  • Cider Vinegar
  • Vegetable Oil

Mix together all of these ingredients in a blender.  Let the chicken marinate in this mixture overnight in the refrigerator.  The next day, cook the chicken by grilling or baking in the oven.

Notes

  • To marinate the chicken, put the marinade in a plastic ziplock bag.  Add the chicken and lock it up.  This method makes it easier to cover all of the chicken.  And it’s an easy cleanup.
  • Once you have used up the marinade, toss it.  Do not reuse marinade that has been used on raw chicken.
  • This marinade also works with pork or even with roasted veggies.

Ingredients

  • 1/2 cup Honey
  • 1/2 cup Apple juice
  • 2 teaspoon Garlic Powder
  • 1/2 teaspoon ground Ginger
  • 2/3 cup Soy Sauce

Instructions

  • Mix all together in a blender and let the chicken sit overnight in the fridge. You may want to grill or bake.

To Grill Chicken

  • To grill this remove chicken from marinade, let the marinade drip off. Cook in a medium-high heat pan with little oil.

To Bake Chicken

  • To bake, remove chicken from marinade, set chicken in a baking dish, and bake at a 350-degree oven for 15 to 20 minutes, or until done.

    Take it from me, just buy San-J Teriyaki. I ate more of this Bill Knapp’s marinade than anyone else on planet Earth when it was around. San J is the next closest thing to THE REAL DEAL

      I used to work at my Local Bill Knapp’s when I was 18. Over 20 yrs later I still think about the chicken breast and how tender and flavorful it was. So, your suggestion is skip the recipe and go w that teriyaki sauce instead?

    I wondered if you might have a “copykat” recipe from the Bill Knapps Children’s Menu. We used to order the “Elephant” which was chicken pieces in a creamy sauce with some vegetables, then their famous biscuit on top. It was SO good! Thanks!!!!
