How to make Buckeye Dip with Cool Whip

To prepare the dip:

  1. Take the cream cheese out of the fridge for at least 10 minutes before starting the recipe to give it enough time to soften. 
  2. Put the cream cheese and creamy peanut butter in a large bowl and mix until smooth. Use a stand or electric hand mixer with a paddle attachment to make it easier. 
  3. Sift the powdered sugar into the bowl and mix it on a low setting until fully incorporated. To prevent the powdered sugar from flying everywhere, you can add it in batches. 
  4. Fold in the Cool Whip and all but about a tablespoon of mini chocolate chips.

  1. Spoon the dip into a serving bowl and cover it with plastic wrap. Chill the dip in the refrigerator for at least an hour.

Recipe variations

Mocha Buckeye Dip. Coffee lovers will appreciate the subtle espresso flavors in this variation. Add a teaspoon of instant espresso powder to the dip. 

Chocolate Hazelnut Buckeye Dip. Swap the peanut butter for Nutella and skip the powdered sugar for a sweet and nutty riff on the original. 

Peanut Buttercup Buckeye Dip. Freeze the peanut butter cups and break them into small pieces. Swap the broken peanut butter cups for the chocolate chips in the recipe above. 

What to dunk into this dip 

You have a lot of options for dunking with this Buckeye Dip. It’s creamy enough to dip graham crackers without them breaking, but crisp apple slices add a slight tartness to help balance the sweetness.

Nilla Wafers, chocolate chip cookies, or chocolate graham crackers would be delicious dunkers. Try dipping a pretzel rod into the dip for a sweet-and-salty treat.

How to store the leftover dip 

Stay safe by throwing away the dip that you have already served, but you can keep the unsevered dip right in the serving bowl. Cover the top of the dip with plastic wrap and stick it in the fridge. 

How long does the dip last?

Ingredients
 

  • 8 ounces cream cheese softened
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 8 ounces Cool Whip
  • 10 ounces mini chocolate chips divided use

Instructions

  1. In a mixing bowl, combine the cream cheese and peanut butter and beat with an electric mixer until smooth. Sift the powdered sugar into the bowl and beat until smooth. Gently fold in the Cool Whip and all but 1 tablespoon of the mini chocolate chips.
  2. Transfer to a serving dish. Cover and chill for at least 1 hour.
  3. Top with the remaining chocolate chips and serve with your choice of dippers, such as graham crackers, sliced apples, butter cookies, etc.

Notes

The order of mixing matters here. Beating the cream cheese and peanut butter together until completely smooth before adding anything else is the most important step in the entire recipe. Any lumps at that stage will not smooth out once the powdered sugar and Cool Whip are added. Take an extra minute here and the rest of the recipe comes together effortlessly.
Pressing plastic wrap directly against the surface of the dip before chilling prevents a skin from forming on top. This is especially important if you are making the dip the night before serving.
If you are serving this at a party, consider setting the serving bowl inside a slightly larger bowl filled with ice to keep the dip cold and at its best texture throughout the event.
