Why This Recipe Works

The secret to an authentic McGriddle lies in those sweet pancake griddle cakes that replace traditional buns. You achieve the perfect size and thickness using egg ring molds while brushing with syrup creates that signature sweet coating. The combination of fluffy scrambled eggs, melted cheese, and savory sausage creates the ultimate breakfast harmony that McDonald’s made famous.

Why you’ll love this McGriddle recipe

Homemade McGriddles are a healthier and less expensive than buying them at your local McDonald’s, and you don’t have to be a chef.

If you can fry an egg, you can make this homemade McGriddle recipe! You can easily prepare multiple sandwiches to freeze for later, so you always have a quick and hearty meal on hand.

Check out below for more tips on how to prepare them in advance.

Ingredients

For the Griddle Cakes:

  • Pancake mix – Creates the signature sweet “bun” that makes McGriddles special
  • Water – Hydrates the pancake mix according to package directions
  • Non-stick spray – Prevents sticking and ensures easy removal from molds
  • Pancake syrup – Brushed on for authentic sweet coating (maple syrup works too)

For the Filling:

  • Sausage patties – Provides savory protein base (Walmart brand closely matches McDonald’s)
  • American cheese – Melts perfectly and adds creamy richness
  • Large eggs – Creates fluffy, perfectly sized egg patties
  • Salt – Enhances egg flavor
  • Ground black pepper – Adds subtle spice to seasoned eggs
  • Oil – For cooking eggs (clarified butter mimics McDonald’s flavor)

Ingredient notes

You can use your favorite pancake recipe instead of a mix.

McDonald’s uses pancake syrup, but you can use real maple syrup instead.

The Walmart-brand sausage patties are as close as you’ll get to what McDonald’s serves in its McGriddles.

Any vegetable oil will do, but McDonald’s uses clarified butter, giving the restaurant’s griddlecakes a rich, buttery flavor.

How to make a McDonald’s Copycat McGriddle

To prepare the griddle cakes:

  1. Mix the pancake batter and water according to the directions on the package.
  2. Heat a non-stick pan, skillet, or griddle over medium heat.
  3. Spray non-stick spray on the cooking surface and several 3-inch wide egg ring mold.
  4. Place the egg molds on the cooking surface and fill halfway with the pancake batter.
  5. Cook the griddle cakes with the egg molds on until small bubbles form on the surface.
  6. Remove the egg molds, flip the griddle cake, and finish cooking on the other side.
  7. Lightly brush the griddle cakes with pancake syrup and reserve for later.
  8. Repeat until you have eight griddle cakes.

To cook the eggs:

  1. Heat a non-stick skillet or griddle over medium-low heat.
  2. Crack a single egg into a small bowl and season it with salt and ground black pepper. Whisk well.
  3. Add oil to the cooking surface and pour the seasoned egg onto it.
  4. Let the egg cook until the top looks only slightly wet. Fold in the sides to form a 3-inch square and flip.
  5. Cook for 30 more seconds, transfer to a plate, and repeat with the remaining eggs.

To assemble the McGriddles:

  1. If you don’t have enough stove space to prepare everything, you can keep all the components on a baking pan in your oven set to WARM.
  2. The order of the McGriddle is griddle cake, egg, sausage, cheese, and then another griddlecake.

Pro tip: Use the less attractive griddle cakes on the bottom side of the sandwiches and the better-looking ones on top.

What to serve McGriddles with

A Sausage McGriddle goes with all of your other breakfast favorites. Here are a few:

  • Coffee. Whether you prefer classic drip or something a bit fancier, nothing gets your morning moving like a large cup of coffee.
  • Hash browns. Potatoes go great with breakfast, but they can be messy to eat on the go. Wrap a hash brown patty in a paper towel or even try adding it as a topping to the McGriddle.
  • Yogurt Parfait. If you have a little more time for breakfast and are looking for a healthy and delicious side dish, try making a Yogurt Parfait. To make Yogurt Parfaits, alternate layers of vanilla yogurt, fresh mixed berries, and granola in a tall glass.

Storage & Reheating Instructions

  • Freezing: Freeze components separately on baking trays, then reassemble and wrap them in plastic. Store in airtight containers for up to 1 month.
  • Refrigerator Storage: Wrap assembled sandwiches in plastic wrap for up to 3 days. Components stay fresher when stored separately.
  • Reheating Method: Remove plastic wrap, wrap in paper towel, and microwave for 60 seconds per sandwich. For best results, defrost frozen sandwiches in the refrigerator first.
