How to make this salad

  1. In a large serving bowl, wooden is best, mash together the garlic, dry mustard, Worcestershire sauce, fresh lemon juice, anchovies, and red wine vinegar until you get a smooth paste. A pestle, muddler, or the flat end of a rolling pin works well. 
  2. Whisk in the extra virgin olive oil and the grated Romano cheese. You can cover the bowl and store the dressing for a few hours before assembling the salad. 

To finish the salad:

Ingredients

  • 3 garlic cloves
  • 1/2 tablespoons dry mustard
  • 1 1/2 teaspoon Worcestershire sauce
  • 1 tablespoon lemon juice
  • 4 anchovies
  • 2 1/2 tablespoons red wine vinegar
  • 1 cup extra virgin olive oil
  • 2/3 cup grated romano cheese
  • 1 1/2 heads romaine lettuce rinsed, dried, and torn into pieces

Instructions
