While Doritos are basically flavored corn chips, believe it or not, that addictive flavor dust helps to transform “just another casserole” night into something extraordinary. Whether you are a casserole aficionado or never made one before, you need to try this simple and delicious recipe.

Which Type of Doritos Should I Use?

Although the recipe below suggests using the classic flavor of Doritos, just about any of them work.

The one flavor that you may want to steer clear of is Cool Ranch. Although it is one of the most popular Doritos flavors, it doesn’t match very well with the rest of the ingredients in this recipe.

Instead, stick with the Doritos varieties based on cheese or chili flavors. If you can’t get enough spice, you should go for the Flamin’ Hot flavors like Nacho or Limon.

You can get as creative as you want with the Doritos by mixing different flavors, or for a unique texture, try using Chili Nacho Cheese 3-D Doritos whole as the middle layer.

Getting Creative with the Filling

Now that you have the crunch sorted out, it is time to talk about the filling. In this Dorito casserole, beef and spicy chorizo sausage come together to create a complex burst of flavors, but it isn’t your only option.   • Like most casseroles, this one gets better after a night in the fridge. If you make the Mexican Dorito Casserole recipe ahead of time, wrap it tightly with plastic wrap in the casserole dish before cooking. Bake as directed in the recipe.
  • Keep leftovers for up to three days in the fridge. Keep the uncut casserole in the dish and cover it in plastic wrap. If you want to store leftovers for longer, cut the casserole into serving portions and wrap each one individually in aluminum foil. The casserole will keep well in the freezer for up to a month.
  • Reheat in the oven. Let the casserole come up to room temperature and cut it into individual serving sizes. Put the pieces you want to reheat into a baking pan, cover with aluminum foil, and cook for 20 minutes in a preheated 350-degree oven.

How to Make Dorito Casserole

  1. In a 2-quart pot, combine ground beef, chorizo, chili beans, kidney beans, cream of chicken soup, tomatoes and green chilies, onions, black olives, paprika, cumin, and chili powder.

  2. Simmer the meat and bean mixture for 1 hour.

  3. Crush the bag of Doritos and sprinkle the bottom of a casserole dish with a third of the Doritos.
  4. Sprinkle 1 cup of cheese over the Doritos.

Ingredients

  • 12 ounces cheese Doritos
  • 1 pound ground beef cooked and drained
  • 1 pound chorizo cooked and drained
  • 4 cups shredded cheddar cheese
  • 1 cup chopped white onion
  • 15 ounces light red kidney beans
  • 15 ounces chili hot beans
  • 10.5 ounces cream of chicken soup
  • 20 ounces Rotel diced tomatoes with green chilies 2 cans
  • 4 ounces sliced black olives 2 small cans
  • 1 tablespoon paprika
  • 3 tablespoons chili powder
  • 1 teaspoon ground cumin

Optional Ingredients

  • 2 cups shredded iceberg lettuce
  • ½ cup sour cream

Instructions

  • In a two-quart pot, mix ground beef, chorizo, chili beans, kidney beans, cream of chicken soup, tomatoes green chilies, onions, black olives, paprika, cumin, and chili powder. Simmer for 60 minutes.
  • Preheat oven to 350 degrees.
  • Crush the bag of Doritos and sprinkle the bottom of a casserole dish with a third of the Doritos.
  • Sprinkle 1 cup of cheese over the Doritos. 
  • Top Doritos with half of the meat and bean mixture.
  • Add another layer of Doritos and cheese.
  • Top with the remaining meat and bean mixture. 
  • Add remaining Doritos and cover with remaining cheese. 
  • Bake, uncovered, at 350 for 30 minutes.
  • Let cool and cut into lasagna-sized servings.
  •  Top with shredded lettuce and sour cream if desired.
