Boiling: If you want to boil sweet potato, scrub the raw potato under running water, peel it, then cut it into cubes to speed up the process. Make sure to cut your sweet potatoes into approximately equal-sized pieces so they cook at the same rate. And be careful not to overcook them as they tend to absorb water. Be sure to drain off all the water.

Quick Prep in the Microwave: Pierce each sweet potato a few times with a fork and cover it with a damp paper towel. Microwave on high or use the potato setting for 11 to 15 minutes until tender. When cool, scoop out the potato flesh and mash until smooth.

  • 1 jar marshmallow crème
  1. With an electric mixer, beat the egg whites, vanilla, and salt at high speed until foamy. Gradually add the maple syrup and beat to get stiff peaks.
  2. Beat 1/3 of the marshmallow crème into the egg white mixture. Add the remaining crème and beat until smooth (approximately 1 minute).
  3. Spread or pipe the meringue topping in a decorative pattern. Bake the casserole for about 15 minutes or until the topping is lightly browned.

  • 1/2 cup raisins optional
  • 1/2 cup milk
  • 1 1/2 teaspoons vanilla extract


  • 1/2 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans
  • 3 tablespoons butter


  • Preheat the oven to 350°F.
  • Mix all the ingredients for the sweet potato base and transfer the mixture to a 9×9-inch glass pan.
  • Mix all the ingredients for the topping and spread the mixture on top of the sweet potatoes.

    the only difference between Burbank’s and La Comedia’s sweet potato casserole is 1C mashed sweet potato? That would make Burbank’s a casserole with a tad more structure because of the potato to egg ratio. I think I will make Burbank’s instead for Christmas dinner.
