Sweet Potato Base
- 3 cups cooked mashed sweet potatoes
- 1/2 cup white sugar
- 2 eggs beaten
- 1/2 teaspoon salt
- 1 stick (4 ounces) butter melted
- 1/2 cup raisins optional
- 1/2 cup milk
- 1 1/2 teaspoons vanilla extract
Topping
- 1/2 cup light brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
- 3 tablespoons butter
Instructions
- Preheat the oven to 350°F.
- Mix all the ingredients for the sweet potato base and transfer the mixture to a 9×9-inch glass pan.
- Mix all the ingredients for the topping and spread the mixture on top of the sweet potatoes.
- Bake for 15 minutes or until heated through.

the only difference between Burbank’s and La Comedia’s sweet potato casserole is 1C mashed sweet potato? That would make Burbank’s a casserole with a tad more structure because of the potato to egg ratio. I think I will make Burbank’s instead for Christmas dinner.
