Copycat Olive Garden Salad Dressing

By Stephanie Manley Updated 08/4/26

Olive Garden’s salad has a devoted following built on crisp iceberg, tangy pepperoncini peppers, and a creamy Italian dressing poured tableside with a generous hand. This copycat dressing recipe blends mayonnaise, Parmesan, Romano, and Italian seasonings into a creamy, tangy dressing that tastes just like the restaurant version. Making it at home means fresher flavor, no preservatives, and the freedom to adjust sweetness and tanginess to your preference. It comes together in a food processor in under 5 minutes and keeps well in the refrigerator for up to 10 days.

Olive Garden’s Italian dressing is a creamy emulsified vinaigrette rather than a classic oil-and-vinegar Italian dressing. It gets its signature creaminess from mayonnaise, its body from vegetable oil, and its balanced tang from white vinegar and lemon juice. Two types of hard Italian cheeses add savory depth, and a blend of dried herbs gives it that distinctive restaurant flavor.

The bottled version sold in grocery stores is convenient but contains preservatives, stabilizers, and a different flavor profile than the fresh dressing served at the restaurant. This copycat version is mixed fresh so the herbs and cheese have a brighter, more vivid presence in every bite.

Why this homemade version outshines the store-bought option

The combination of mayonnaise and vegetable oil creates two layers of richness. Mayonnaise is already an emulsion of oil and egg, so it acts as a stabilizer for the other fat in the recipe. The result is a dressing that stays creamy and cohesive rather than separating like a simple vinaigrette.

Light corn syrup does two things: it adds a subtle sweetness that balances the acidity, and its viscosity gives the dressing that slightly thick, clingy texture you notice at the restaurant. A dressing made without it tends to feel thin.

Using two cheeses instead of one gives more complexity. Parmesan provides a mild, nutty saltiness while Romano is sharper and more pungent. Together they create the savory depth that makes this dressing distinctive.

Letting the finished dressing rest in the refrigerator for at least one hour before serving is important. The dried herbs need time to rehydrate and release their flavor into the liquid base. Tasting it straight from the blender gives an incomplete picture of the final result.

Ingredients

  • Mayonnaise – Creates a creamy base and helps emulsify the dressing; Hellman’s or Duke’s brands are recommended for best flavor
  • White vinegar – Provides the signature tangy flavor and helps preserve the dressing
  • Vegetable oil – Creates the proper consistency and mouthfeel; contrary to what you might expect, Olive Garden doesn’t use olive oil in their dressing
  • Light corn syrup – Adds the perfect amount of sweetness and creates the signature texture
  • Grated Parmesan cheese – Contributes savory depth and authentic Italian flavor
  • Grated Romano cheese – Adds a sharper, more complex cheese flavor that balances the dressing
  • Garlic powder (or fresh garlic clove) – Provides essential aromatic flavor that makes the dressing distinctively Italian
  • Dried Italian seasoning – Contains the perfect blend of herbs to create that signature Olive Garden taste
  • Dried parsley flakes – Add color and a fresh herbal note
  • Lemon juice – Brightens all the flavors and adds a subtle citrus note

Step-by-Step Instructions

  1. Combine all ingredients: Blend or process the mayonnaise, white vinegar, vegetable oil, corn syrup, Parmesan cheese, Romano cheese, garlic powder, Italian seasoning, parsley flakes, and lemon juice in a food processor.

  1. Blend thoroughly: Process until all ingredients are completely combined and the dressing is smooth, about 30-60 seconds.
  2. Taste and adjust: Sample your dressing and adjust to your preference. Add a little more corn syrup or sugar if it’s too tart. If it needs more zip, add more vinegar or lemon juice.
  3. Transfer to container: Pour the finished dressing into an airtight container or glass bottle.
  4. Refrigerate: For best flavor, refrigerate for at least 1 hour before serving to allow the flavors to meld.

Storage and Reheating Instructions

  • Freezer Storage: Not recommended. Mayonnaise-based dressings break apart when frozen, resulting in a separated, watery texture that cannot be fully restored.
  • Refrigerator Storage: Store in an airtight container for up to 10 days. Shake or whisk well before serving if the dressing separates during storage.
  • Reheating Method: No reheating needed. If the dressing thickens in the refrigerator, let it sit at room temperature for 5 minutes before using.

The vinegar was a bit strong. I would do a 1/4 next time. The spice blend was very good.

I’ve made this quite a few times over the years. Even with a few variations substituting the corn syrup for honey, using olive oil for vegetable oil, and fresh lemon, garlic and parsley. It WAS a hit at my dinner parties. I miss entertaining 🙁

Great recipe! Thank you so much! I did find it a bit sour, so the second time I made it with only 1/4 vinegar and it was perfect. I also made a few substitutions because I was missing some ingredients (replaced parsley with more Italian seasoning, replaced Romano cheese with more Parmesan, and used maple syrup instead of corn syrup).
