To make omelet bites, you’ll need:

  • Eggs
  • Cottage cheese
  • Monterey Jack Cheese, shredded
  • Cheddar cheese, shredded
  • Salt
  • Bacon bits

How To Bake Dunkin Omelet Bites

To make these convenient handheld omelets: 

  1. Preheat the oven to 350°F.
  2. Blend the eggs, Monterey Jack, cottage cheese, and salt on low speed until the mixture is slightly thickened and free of lumps. If you don’t have a blender, try whisking everything together in a bowl. Although the texture will not be the same, the egg bites will still be delish.

  1. Add the cheddar cheese and bacon bits to the egg mixture. Pulse once or twice, but avoid pureeing the bacon.

  1. Lightly spray a mini-donut baking pan or silicone mold with oil. Even when using a non-stick pan, a light spritz of oil is necessary to prevent the eggs from sticking. A mini muffin pan is an acceptable substitute for a mini donut baking pan, but you should extend the cooking time by a minute or two to ensure the bites cook thoroughly.
  2. Set the mini donut baking pan on top of a cookie sheet and pour the omelet mixture to the top of each bold.

  1. Bake in the preheated oven until the eggs are firm, about 10 to 12 minutes.
  2. Remove the egg bites from the baking pan immediately.

Egg White Veggie Omelet Bites – Use six egg whites instead of 4 whole eggs. Substitute the bacon with tomato and spinach. Substitute the Monterey Jack and Cheddar cheeses with a four-cheese blend.

Ingredients

  • 4 eggs
  • 4 tablespoons cottage cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 1/4 teaspoon salt
  • 1/4 cup shredded cheddar cheese plus extra, if desired
  • 1 tablespoon real bacon bits

Instructions

  • Preheat the oven to 350°F.
  • In a blender, combine the eggs, cottage cheese, Monterey Jack cheese, and salt. Puree until it is a uniform mixture. Then add the cheddar cheese and bacon bits and pulse a few times.
  • Spray muffin or donut pans with non-stick spray.
  • Pour the egg mixture into the pans. If using the donut-shaped tins, fill the rings until they are almost full; otherwise, the omelet bites will be oddly shaped. This does not matter on muffin tins.
  • Bake for 10 to 12 minutes or until the omelet bites spring back when touched.
  • Remove the pan from the oven and remove the omelet bites from the tins. Serve immediately, or, if desired, you can sprinkle some cheddar cheese on top and place the bites under the broiler until the cheddar cheese melts.

    I really wanted the dunks texture so I experimented by turning the oven down to about 250° F and put the pan into another larger pan of water (water bath), It needed to cook much longer. At least an hour if not more, but my oven has been giving me trouble, so keep an eye on yours. Also, I didn’t have cottage cheese and I substituted plain non fat Greek yogurt and it was delicious. Since it wasn’t cottage cheese I was able to mix everything really well with a whisk
    The rest was the original recipe and I felt it was really very close to dunks!

    I took someone else’s suggestion and added a Tbsp of cream cheese to the mix. I also put half the bacon bits in the mixture, then used the other half to sprinkle on top (after I had poured the mixture into the muffin tin) to help keep the bacon mixture through out and not just on the bottom. I also had to cook mine for closer to 17 minutes. But – they are delicious! I have some leftover that I plan to reheat over the next couple days, so I hope they reheat well! 🙂

    While tasty, these taste nothing like the Dunkins omelette bites theirs are denser and creamier…. These tasted very eggy.

    These are really good! My only problem is the cheese and bacon stay at bottom of the pitcher, so it’s hard to keep it even. I think I will try putting the cheese and bacon at the bottom of the cup before I put the egg mixture in. Definitely saving me a trip to DD!

    My egg bites after baking had green specks throughout, eggs and cheese were fine before cooking. Any idea why?

        I’m not positive, but it could be, the eggs were not blended enough. For nice fluffy eggs for this recipe or for scrambled eggs, be sure to use something that will get some air into the mixture. I know a place that uses their milkshake machine to scramble eggs.
