- 3 cups sugar
- 1 1/2 cups vegetable oil
- 3 cups grated zucchini
- 4 eggs
- 3 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup chopped black walnuts

- 4 ounces butter
- 8 ounces cream cheese
- 1 pound powdered sugar
- 1 teaspoon vanilla extract
Garnish
- 1/2 cup chopped black walnuts
Instructions
Zucchini Cake
- Preheat oven to 350 degrees.
- Grease two 9-inch round cake pans.
- Cream together sugar and oil in a large bowl.
- Add grated zucchini and eggs and mix together well.
- Add the dry ingredients – flour, baking powder, baking soda, salt, and cinnamon. Mix to combine.
