Zucchini Cake

Growing up during the summer we had a large garden that my parents worked on. We enjoyed all sorts of fresh vegetables all summer long. This was one way we enjoyed zucchini cake during the summer. Source Judy Eynard. Pueblo, Co. 1980.

Zucchini Cake

Zucchini cake is a great way to use fresh grated zucchini.

  • 3 cup sugar
  • 1 1/2 cup vegetable oil
  • 3 cup grated zucchini
  • 4 eggs
  • 3 cups all purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped nuts


  • Cream together sugar and oil. Add the 3 cups grated zucchini and eggs. Mix together well and add the remaining ingredients. Spread into an oiled tube pan. Bake 1 to 1 + hours at 350 degrees. Can be topped with cream cheese frosting with black walnuts.

    Tried this last week, was amazing, baking it today for a party, thank you so much. Did tweak a couple of the ingredients due to not having everything in my cupboards. Was my best zucchini cake yet!
