Who doesn't love roasted red potatoes? This side dish is so easy to make, in fact, you will be calling them easy roasted red potatoes in no time.
I am always looking for a simple side dish. Red roasted potatoes are just that dish, you only need a few ingredients for these crispy potatoes and soon you will be enjoying these with your next dinner. You will need red potatoes, salt, black pepper, and vegetable oil to make these potatoes. Of course, you can make them a little extra fancy by adding something like garlic or some parsley if you desire, but it certainly isn't required.
If you aren't familiar with red potatoes they are typically small to medium-sized potatoes. They can be round or a little oblong. It doesn't really matter what shape they are. Their texture once cooked is a moist, smooth, and creamy. They are best used when roasting, mashing, or in soups and stews. Some people even boil these potatoes up and they add them to salads. These potatoes can be sold as “new potatoes”. They are called “new potatoes” because these are often harvested before they have grown to full size.
For this recipe, I am using canola vegetable oil. People always ask me what type of oil to use. Honestly, if I am baking something, or I am using something with a lot of aromatic ingredients I am simply going to use the least expensive oil I can find. I don't think you get a great value out of using an extra virgin olive oil when you cook a dish. Heating an extra virgin olive oil tends to cook out the wonderful flavors. So I will use vegetable oil, soybean oil, sunflower, or whatever I have on hand.
One tip I really like to use on cooking these potatoes is the smaller you cut these, the less time they will take to cook. So if I am in a hurry and need to cook potatoes quickly, the smaller I will cut them.
Easy Oven Roasted Red Potatoes
Roasted red potatoes are easy to make in your oven, and they taste so good.
- 2 pounds red potatoes
- 2 to 3 tablespoons vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper (optional)
- 1 tablespoon chopped fresh parsley (optional)
Preheat oven to 425 degrees. Wash, and cut potatoes into quarters. Place potatoes in a bowl and coat with vegetable oil. Place potatoes on a baking sheet and a single layer. Sprinkle with salt, and black pepper if desired. Bake for 30 to 45 minutes or until golden brown. You may want to flip the potatoes once during cooking so all sides brown evenly. If desired just before serving you can add fresh parsley.
