What makes this Beefy Dorito Casserole so good?
It’s perfect for serving to your family! Who doesn’t love Doritos? Did you know you can swap the flavor of Doritos out? Try it with Cool Ranch or even the elusive Taco flavor when they bring them back.
Lots of perfectly seasoned ground beef served up with crunchy Doritos, and just the right amount of cheese is a dinner everyone will love.
Lots of people use crushed corn chips to add an extra bit of crunch to the top of a casserole, and you probably have chowed down at least once on a Frito Pie. Now get ready for the king of corn chip casseroles with this Mexican Dorito Casserole recipe.
While Doritos are basically flavored corn chips, believe it or not, that addictive flavor dust helps to transform “just another casserole” night into something extraordinary. Whether you are a casserole aficionado or never made one before, you need to try this simple and delicious recipe.
Which Type of Doritos Should I Use?
Although the recipe below suggests using the classic flavor of Doritos, just about any of them work.
The one flavor that you may want to steer clear of is Cool Ranch. Although it is one of the most popular Doritos flavors, it doesn’t match very well with the rest of the ingredients in this recipe.
Instead, stick with the Doritos varieties based on cheese or chili flavors. If you can’t get enough spice, you should go for the Flamin’ Hot flavors like Nacho or Limon.
You can get as creative as you want with the Doritos by mixing different flavors, or for a unique texture, try using Chili Nacho Cheese 3-D Doritos whole as the middle layer.
Getting Creative with the Filling
Now that you have the crunch sorted out, it is time to talk about the filling. In this Dorito casserole, beef and spicy chorizo sausage come together to create a complex burst of flavors, but it isn’t your only option. You can take a slightly healthier route by substituting an equal amount of ground turkey or chicken.
If you have a vegetarian family member, this is a perfect casserole recipe to serve with tofu crumble or meatless ground beef because with everything going on, it will be difficult to tell the difference.
Topping the Casserole
Oh, did you think it wasn’t possible to pack even more flavor into this casserole? Well, you are wrong, it is! Did anyone say toppings?
Anything that you would ordinarily put on your taco is fair game here. That means sour cream, shredded cheese, salsa, guacamole, lettuce, tomatoes, avocado, roasted corn, and more.
Set a few bowls of toppings out and let everyone customize to their heart’s content. Don’t forget to have a few hot sauces available as well.
Tips for Storing and Reheating Mexican Dorito Casserole
- Like most casseroles, this one gets better after a night in the fridge. If you make the Mexican Dorito Casserole recipe ahead of time, wrap it tightly with plastic wrap in the casserole dish before cooking. Bake as directed in the recipe.
- Keep leftovers for up to three days in the fridge. Keep the uncut casserole in the dish and cover it in plastic wrap. If you want to store leftovers for longer, cut the casserole into serving portions and wrap each one individually in aluminum foil. The casserole will keep well in the freezer for up to a month.
- Reheat in the oven. Let the casserole come up to room temperature and cut it into individual serving sizes. Put the pieces you want to reheat into a baking pan, cover with aluminum foil, and cook for 20 minutes in a preheated 350-degree oven.
