    Since Panera took over the Paradise Bakery restaurants in AZ, I can’t find any place that can compare to the Paradise Bakery chicken salad, best EVER!!!!! It was served on a dark molasses bread. Again, I’ve been unable to duplicate that. If you, or anyone, knows of similar chicken salad or molasses bread recipes, please share! Thanks!!!

    Please looking for a recipe for a bread some one that gave me a slice of when I was in a rehab for an over dose of pain med. The person that gave me a slice of your delicious bread was sweet as I remember it had raisins and walnuts.I go to different Panera but they don’t have or don’t know of any bread with those ingredients. Is t there such a bread and if so can I get the recipe?

      Panera Tomato Basil Bread

      .1 (.25 ounce) package active dry yeast
      .1/4 cup warm water (105 degrees to 115 degrees)
      2 cups warm tomato juice (110 to 115 degrees F)
      1/4 cup ketchup
      1/4 cup grated Parmesan cheese
      3 tablespoons sugar
      2 tablespoons butter or margarine, melted
      1 teaspoon salt
      1/2 teaspoon dried basil
      1/2 teaspoon dried oregano
      6 3/4 cups all-purpose flour

      In a mixing bowl, dissolve yeast in warm water. Add the tomato juice, ketchup, Parmesan cheese, sugar, butter, salt, basil, oregano and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/4 hours. Punch dough down. Divide in half. Cover and let rest for 10 minutes. Shape into loaves. Place in two greased 9-in. x 5-in. x 3-in. loaf pans. Cover and let rise in a warm place until doubled, about 1 hour. Bake at 375 degrees F for 25-30 minutes or until golden brown. Remove from pans to wire racks to cool.

      Here are the ingredients. You could get a gluten free monster cookie recipe and adapt the ingredients to include everything that’s is in the Panera version.

      Rolled Oats ( May Contain Wheat ), Peanut Butter ( Peanuts, Dried Cane Syrup, Honey, Natural Honey Flavor, Palm Fruit Oil, Salt ), Semi-sweet Chocolate Chips ( Sugar, Unsweetened Chocolate, Cocoa Butter, Soy Lecithin [ Emulsifier ], Natural Vanilla Extract ), Sweetened Dried Cranberries ( Cranberries, Sugar, Sunflower Oil ), Brown Sugar, Walnuts, Sugar, Pasteurized Whole Egg, Unsalted Butter with Natural Flavors ( Pasteurized Cream [ Milk ], Natural Flavors ), Vanilla Natural Flavor ( Water, Alcohol, Vanilla Bean Extractives ), Invert Sugar, Sodium Bicarbonate, Salt .
