What makes this the perfect Rotel Dip
Rotel dip is a classic appetizer featuring melted cheese, spicy tomatoes, and chilies, perfect for all occasions. This version elevates the traditional recipe to the next level by incorporating cream cheese for added richness and sausage for a heartier texture. The result is a dip that’s creamy, loaded with flavor, and substantial enough to satisfy hungry party-goers. There’s no standard version of this party favorite, so you can easily customize ingredients to create the perfect dip for your crowd.
Why this recipe works
The magic happens through the combination of three key cheese elements: Velveeta provides smooth, consistent melting without clumping, cream cheese adds luxurious richness and body, while the Rotel tomatoes contribute tangy heat that cuts through the richness. The sausage adds protein and savory depth, making this more than just a cheese dip but a substantial appetizer that can easily serve as a light meal.

Velveeta Rotel Cream Cheese Dip is a must-try!
- Velveeta cheese – Processed cheese product that melts smoothly without clumping for perfect texture
- Cream cheese – Adds extra richness and creamy body to the base
- Rotel diced tomatoes with green chilies – Provides signature tangy heat and Southwest flavor
- Italian sausage – Contributes savory protein and seasoned flavor throughout the dip
- Milk – Helps achieve perfect consistency and prevents the dip from being too thick

Variations to your Velveeta Rotel Dip
There are endless possible variations on the basic Velveeta and Ro-Tel dip. For instance, you can add some vegetables, such as green peppers or celery. If you have used a mild Ro-Tel and don’t think your dip will have enough heat, add a few dashes of hot sauce or a pinch of dried chili flakes. You can even add a can or bottle of beer for a delicious, unusual twist. Here are a few more ideas.
- Zippy Salsa Cheese Dip – add some mild or spicy salsa.
- Uber-Yummy Chili-Cheese Dip – add a can of chili (with beans).
- Meat-Lovers Dip – add a pound of browned sausage or ground beef.
- Creamy Mushroom Dip – Add a can of low-fat cream of mushroom soup.
- Extra Cheesy Dip – Add a block of cream cheese.

Other popular Velveeta dip recipes
- Chihuahua Cheese Dip – Velveeta, cream cheese, sour cream, grated sharp Cheddar, salsa, green chilies, olives, and garlic powder.
- Hamburger Velveeta Dip – Velveeta, browned lean ground beef, chopped onion, salsa verde, salt, and pepper.
- Nacho Cheese Dip – Velveeta, cream of chicken soup, chopped green chilies.
What should you serve this dip with?
You will want to serve this with some corn chips. I love using the big, wide Frito chips or the Tostitos scoops. You don’t want to miss a single drop of this delicious sausage cream cheese dip recipe.

Rotel seriously makes everything better.
I don’t eat meat. Does it make any difference if I omit the meat? I just like it plain with the chip. Thanks.
No, you can enjoy the dip anyway you make it.
My moms friend made this and it tasted familiar, my moms ex boyfriend used to make something like it and I finally found a recipe. Amazing! My little boy is gonna love this 🙂
Does the cream cheese help cool down the dip, i accidentally got the spicy rotel.
I think it will help some.
It will help a bit.
I got the jalepina Velveeta and TALK about HOT.
I have made this dip for years. I only use sage sausage, add 1 can of kidney beans, 1 can of whole corn, and chopped chives. This can be a meal!
Indeed it can!
Fixed this for a Christmas party and everyone complimented the dip. This dip didn’t need any adjustments. It was Just Right!!
I substituted two cups sharp cheddar cheese and 2 cups pepper jack cheese.. (i hate velveeta) it tastes great and in a crockpot on low, it stays melty and smooth
I need to post my triple dog dare you rotel dip recipe sometime.
I wished you would have posted your triple dog dare you cheese dip
What is the amounts per serving size for this?? I am trying to make the recipe for about 100 people and I am trying to make sure I will have enough for everyone without spending too much money and having too much leftovers. Can’t wait to try this! THANKS
I would think this recipe could make about 20-25 servings. Those should be fairly ample servings though, you may be able to make about 3 matches of this for your party. ~stephanie
This by far the best rotel dip I have ever had. I was tired of rotel dip until I tried this one, it was actually the hit of the party!
